ST 1 is harder. I skate ST 8. So perfect.
I used a size small soul on mine.
Go with a small probably. You'll just have to shave more from the bs and fs areas on the souls.
But it will be worth not having even wider souls.

Mintons are hard.
ST-8 are soft.
ST-pro, with white cuffs are soft.
ST-80 is a hard boot with a very soft cuff. That might be your best.
